Cut off rear caliper bracket bolts?

I stripped the 8mm socket head bolts that hold the caliper bracket on.

Anybody just cut the socket head off? I've read a lot about heating it up with an oxy torch ( i don't own one), but i don't see any reason why you cant just cut it off.
