Brakes Dragging and "Popping" Pedal...Weird

VW Jetta 2002 MkIV ALH Motor...

Bought this car from a friend two weeks ago and drove it down to Florida from Chicago. Somewhere around Atlanta while pulling off the highway the brake pedal "popped" out from under my foot, and then back. Made a quick air noise too. Not sure but that's the best way to describe it.

After that felt like the car was struggling - turned out the brakes were dragging.

Investigated and measured the temp of the brakes - over 700 degrees. I pumped the brakes several times (per my friends suggestion) and that fixed the problem temporarily.

Got home and inspected all brakes - the right driver side caliper and cylinder were fried - the pads were cooked too. You could tell that heat had been a factor. The rest seem OK.

I replaced the right driver caliper assy. and put new pads on.

Then upon test driving the "popping" brake pedal thing happened a few times.

It seems vacuum related - could it be a bad booster or something simpler? I'm new to TDI so just looking for some guidance on where to start looking.
